In separate bowl combine rice, soy sauce, sesame oil, garlic, ginger, scallions, and egg. Mix well. Add remaining ingredients except for the parsley and mix well. Pour into pan and spread evenly. Return to heat and cook about 10 minutes stirring occasionally. Sprinkle with parsley and serve.
