1. Cut off the stem from the jalapenos and remove the seeds. Place the jalapenos into a bowl and pour 1/4 cup of white vinegar over them. Let sit for 10 minutes. Remove the stems and cut the peppers lengthwise. Remove the ribs and seeds. Chop the peppers into bite sized pieces. Add the chopped peppers to a blender along with the remaining ingredients. Blend until smooth. 2. In a skillet over medium heat, sauté the onions in the olive oil until tender. 3. In a separate bowl combine the flour, salt, pepper, garlic powder, cumin, chili powder, and paprika. 4. Pour the milk into the flour mixture and stir well. 5. Bring the milk to a boil. Reduce the heat to low and simmer for about 15 minutes stirring frequently. 6. Stir in the cheese and sour cream. 7. Serve with tortilla chips.
8. Mexican chipotle rice
1. Heat the oil in a saucepan over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook 30 seconds longer. 2. Stir in the rice and season with salt and pepper. 3. Add the tomatoes and broth and bring to a boil. Cover, reduce the heat to low, and simmer 20 minutes. 4. Uncover and continue cooking until the liquid is absorbed and the rice is tender, about 15 minutes longer. 5. Fluff with a fork and serve hot.

1. Mash together the avocados, cilantro, lime juice, and salt in a bowl. 2. Serve immediately with tortilla chips. 10. Fajitas
